Its Asparagus Day! Here in Switzerland, Spring is when this large veggie is in season- I'm sure you have seen plenty of it in the supermarkets lately! Asparagus is one of the most nutritionally well-balanced vegetables, being high in folic acid and a good source of potassium, fiber, thiamin, and vitamins A, B6, and C.
These gorgeous little parcels of deliciousness from 'Kate Cawdron Cooks' is perfect served as a starter or accompaniment to a spring lunch or picnic.
To make, take a small bundle of asparagus and (if think, cut in half lengthways) then wrap a slice of prosciutto around the middle, lay flat on a baking tray and sprinkle with sea salt and freshly ground pepper and drizzle with olive oil. Cook in the oven at 170C fan fro approx. 10 minutes until the asparagus has softened and the prosciutto starts to crisp, once cooked add shavings of parmesan and chervil, tarragon or parsley leaves.
