I love eating seasonally, especially in the Autumn when there is such an abundance of sun-ripened fruit and veg. Eating home- or locally-grown produce is not only good for you but it's also good for the environment, reducing the energy required to transport it, store it or force-grow it out of season.
This pumpkin bread recipe is one of my favourites as it's so easy to make and tastes of Autumn. So here you go:
Ingredients
1 cup mashed pumpkin
1 cup apple purée
1/2 cup maple syrup or agave nectar
1/2 cup olive oil
2 eggs
1 cup white flour and 1/3 whole wheat flour
1/3 cup oats
1 tsp baking soda and 3/4 tsp salt
As much cinnamon, nutmeg, and allspice as you like.
Method
Whisk dry ingredients in one bowl and mix wet in another, then combine, stirring just until blended.
Bake at 200 degrees C for about 25-30 minutes.
Decorate with some dehydrated apples and icing sugar.
