Hummus is a great thing to have in the fridge. It's really handy to have at-the-ready for lunches and light suppers. It can be used as a dip, a sandwich filling or a tasty addition to a buddha bowl. It's even better when it is home-made. Making your own allows you to adjust flavours to suit your own taste. On top of this, there is less waste as the shop-bought versions usually come in plastic tubs.
This sun-dried tomato version is so delicious and it tastes of the summer!
Ingredients
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/4 cup olive oil
- 1/4 cup sun-dried tomatoes
- 2 tbsp. lemon juice
- 3 cloves garlic peeled
- 1/2 tsp.paprika
- 2 tbsp. water
- 1/4 tsp. salt
Recipe
Put everything into a blender and blend until smooth. Top with a drizzle of olive oil and some extra chopped sun-dried tomatoes to serve.
